We all like to indulge in our favorite foods for Thanksgiving. It's all good, but to avoid those extra holiday pounds from piling up it's good to "nip it in the bud" by having a light calorie day following Thanksgiving.
A great way to do this is to have soup made from the carcass and scraps of the turkey, which makes a delicious and nutritious broth. This broth makes a nourishing low-calorie dinner the day after Thanksgiving and helps to keep the pounds and post-Thanksgiving bloat at bay.
One note of "caution" - No leftover pies; freeze those for a later treat!
My grandma's recipe for a delicious post-Thanksgiving broth
Boil the carcass for about an hour with salt to taste, a few garlic cloves, and some peppercorns
Then, add veggies. I like to use leeks, carrots and celery.
Continue cooking for 10-20 minutes, and enjoy!
Option: Add a cup of wild rice
