Massaging the Tuscan kale in this simple healthy salad gives it a pleasant soft texture. Toasted pumpkin seeds add a touch of crunch.

 
 

SERVES 4

Ingredients

  • Big bunch of thinly sliced Tuscan kale

  • Dressing, even parts:

    • Fresh lemon juice (Meyer Lemons are great for this)

    • Sesame oil

    • Bragg® Liquid Aminos

Preparation

  1. Mix dressing and "massage" dressing into kale for a few minutes (this makes it more tender)

  2. Sprinkle with toasted pumpkin seeds

Make Ahead: This salad can be stored in a refrigerator for one day without wilting.
